No-knead Miracle Bread

Two of our favourite things to wake up to every morning: the smell of freshly brewed coffee and a beautiful loaf of bread baking in the oven. No matter what kind of 'yesterday' you've had, today promises to be a better day when you cut the bread and the rising steam warms your face. We didn’t always bake our own bread; Isn’t making bread too hard? Don’t you need a bread maker? Doesn’t it take too much time to knead? This is what we thought before we learned this recipe from one of our lovely guests. “This will change your life” she said. Now we silently thank her everyday for having inspired us to adopt one of the most joyful rituals of the morning.

Here is the no-knead bread recipe that we have tweaked and made our own. May this add a bit more excitement to your mornings too.

No-knead Miracle Bread

Makes 1 loaf

2 cups All-purpose Flour

1 cup Whole-wheat Flour

1 1/2 tsp Salt

1/2 tsp Instant Yeast

1 1/2 cups Lukewarm Water

Combine all dry ingredients and mix well in a glass bowl. Add the water and use a chop-stick or fork to stir well until all the dry flour at the bottom of the bowl is mixed into a dough. This will activate the yeast and allows the dough to rise. Cover and seal the bowl with plastic wrap. Cover the bowl with a kitchen towel and leave in a dark and warm spot in your kitchen. Now it’s time to wait for the dough to rise.

After 2 hours take the risen dough out of the bowl and place on a flour-covered surface. Cover your hands with some flour and take the edges or corners of the dough and fold them in, forming a dough ball. Put the dough ball back in the bowl, cover and wait for 2 more hours. If you are preparing the dough the night before make sure to leave the bowl in the fridge to slow down the rising process over night.

When ready to bake, warm up your corning ware (with a lid) or Dutch Oven in the oven to 450°F. Place the dough ball on a piece of parchment paper and place inside the hot dish. Put back in the oven and bake at 450°F for 45 min (with the lid closed). If you like more crust you can always bake for 40 min with the lid on and 5 min without the lid.

Take out of the oven, let cool for 10 min, slice and enjoy the heavenly fresh bread with butter or jam. Or both!
