Maple-Cinnamon Granola

 

Mornings at The Edward are sacred. We greet the rising sun with gratitude and pour our coffee with reverence. Mornings are special because they mark the beginning of days yet to be discovered. With possibility on the horizon, we sit beside friends and family to make plans as we delight in the most important meal of the day.

 

Our breakfast table is never complete without homemade granola, and you’ll be happy to hear it’s very simple to make. This recipe is a fast favourite; sweet dates, tart cranberries, and a pinch of salt make for a flavourful bowlful. We recommend pairing this granola with balkan yogurt and strawberries—Top with a drizzle of pure maple syrup and you’re off to a beautiful day.

 

Maple-Cinnamon Granola

Makes about 5 cups

 

2 1/2 cups Oats

1/2 cup Sliced Almonds

1/3 cup Sunflower Seeds

1/3 cup Pumpkin Seeds

1/3 cup Pure Maple Syrup

2 Tbs Coconut Oil

1 1/2 tsp Cinnamon

1 tsp Vanilla

1/4 tsp Sea Salt

1/2 cup Dried Cranberries

1/2 cup Chopped Pitted Dates

 

Combine all the ingredients, except for the cranberries and dates, in a mixing bowl. Stir until combined. Spread mixture in a single layer on a parchment-lined baking sheet. Bake at 300°F for 30 minutes, stirring every 10 minutes.

 

Remove from the oven, add the cranberries and dates and stir to combine. Enjoy warm with yogurt and berries. Cool completely before storing in an airtight container.
